The Bilona Method – A Traditional Art

The Bilona Method – A Traditional Art Made with Gobind Ghee
✉ Email me this recipe

The word “Bilona” comes from the Sanskrit word bilon, which means to churn. This ghee is made using the two-step traditional method:

  • First, milk from A2 cows is boiled and cooled.
  • A spoon of curd is added to ferment it overnight, turning it into yogurt (dahi).
  • The curd is then hand-churned using a wooden bilona to extract makhan (butter)
  • The butter is slow-cooked on a low flame, releasing the aromatic golden ghee.

This slow and careful process preserves the nutrients, enzymes, and medicinal value — unlike commercial ghee which is made from cream and cooked at high temperatures.

🌱 Why Bilona Ghee is Better Than Regular Ghee

Bilona Ghee Commercial Ghee
Made from curd (fermented milk) Made from direct cream or milk fat
Hand-churned, slow-cooked Machine-processed, high heat
Retains enzymes and probiotics Most nutrients destroyed
Small-batch, handcrafted Mass-produced, factory-made
No chemicals or preservatives May contain additives
Rooted in Ayurveda Designed for shelf life

🏡 Final Thoughts

At our store, we don’t just make ghee — we revive a lost tradition. Our ghee is made in small batches, with ethically sourced A2 cow milk, using the original bilona method — just like our grandmothers did.

Try a spoonful and you’ll know:
This isn’t just ghee.
It’s purity, patience, and heritage — in every drop.
