π Steps of the Bilona Method:

Boiling Raw Desi Cow Milk π
Fresh milk fromΒ cows is first boiled to remove bacteria and enhance shelf life. -
Curdling the Milk into Yogurt (Dahi) π₯£
The milk is cooled and a spoon of curd is added to naturally ferment it into curd (dahi) overnight. -
Churning the Curd (Bilona Process) π
Using a wooden churner (called bilona), the curd is churned manually in clockwise and anti-clockwise directions to extract makhan (butter) from it.
This traditional method retains enzymes and good bacteria. -
Separating Butter from Buttermilk π§
The butter is collected and the leftover liquid is buttermilk β a healthy by-product. -
Slow Heating the Butter to Make Ghee π₯
The butter is slow-cooked on low flame in an iron or clay pot until the ghee separates and golden residue settles at the bottom.
